I love sweet potato burgers and am always on the look out for new ways to cook them up, I’ve tried kale and sweet potato patties in the past but I wanted to try something new. Say hello, to sweet potato burgers.
These are delicious and a nice alternative to having a beef burger. Try and make your patties a bit tidier than mine!
A medium sized sweet potato
1 medium sized white onion
100 grams Quinoa
1-2 garlic cloves
Pinch of salt & pepper
50 grams of kale and spinach
Bake your sweet potato until it is soft and slides out of the skin. Once you have your potato cooked you will want to mix it together (the potato will require some mashing) in a bowl with the onion and garlic and continue to mash as you add in the quinoa, kale, spinach and finally the seasoning.
Heat up some oil – coconut or extra virgin – in a pan. Prepare you patties and brown them off in the frying pan. Next you will want to heat your oven to 200 degrees Celsius and then pop in your browned off patties. Bake them for 10 to 15 minutes until they are cooked all the way through.
Serve up with a burger bun some home made guacamole with a side salad.
