Kale and Sweet potato. Two of my favourite things to eat and both are good for you. Need you ask for more? You can use regular potatoes but I prefer a Sweet Potato myself.
Before you start this, roast your potatoes until they are easily pierced with a knife all the way through. Once this has been done, peel the potatoes and mash the insides of the potato. Bin the skins or keep to make potato skins!
Pop on some sour cream, a little bit of mango chutney or just enjoy the kale and sweet potato goodness if you fancy.
2 Large Sweet Potatoes
2 Cups of Kale
1/2 Cup Corriander
1tsp Garam Masala
1 1/2 cups chick pea flour
1tbsp grated ginger
1/2 tsp Cayenne
1 tbsp Coconut oil
Pop you kale and coriander into a food processer and blend with some salt. Once this has been done remove any excess water from the mixed ingredients.
Next add all of your ingridents together into a bowl until the mixture is firm enough to make patties. Pop your coconut oil into a a pan and allow to melt.
Make your patties into pattie shapes! This recipe makes about 10-12 so you can always make some and freeze them for the next time.
Cook your patties on both sides until golden brown then remove and serve!
