Cooking from scratch is something I really enjoy which is why I am trying to do it more often. Doing things you enjoy more often makes sense, right? When it comes to cooking from scratch I love following recipes, love it but I love those meals that come out of the bits left in your fridge and pantry. You know the things that you take for granted for being there but never really use. I have found that these produce some of the most delicious meals. This edition is a How to: Red Lentil & Sweet Potato Stew – Enjoy!
A Sweet Potato
2 Cups of Red Lentils
A white onion
1x Garlic Clove
1/2 Tin of Drained Chickpeas
Ginger (if you wish!)
This is so simple to make and doesn’t take long at all. First you will need to boil your lentils until they are easy to squish with a fork. Once you have done that pop your chick peas in to the water with the lentils and simmer for about 10 minutes. Then drain your chick peas and lentils. Pop them over to one side and lightly cook your onion, garlic and ginger in a little bit of oil – I like Coconut oil for this. I like to use my little Phillips mini chopper to get my veg into fine, cut down pieces.
Once they have been cooked so they are no longer raw pop them to the side. Now boil your cauliflower and sweet potato until cooked. Next you want to pop all your ingredients into a bowl and mix together. I like to add salt and Chilli flakes to taste then serve. It really is so easy to make and tastes delicious. This is really good to make big batches of to take for lunch to work or to have as a side with your dinner.
