How to: Spring Vegetable Pasta

It’s January so that means that after the over indulgence during Christmas we all feel like we need to reign it in a little bit and get back to our pre-Christmas habits or maybe you have set yourself a New Years Resolution to shape up. I am a little bit in between both. With this I have been getting back to eating a lot better and preparing meals from scratch because let’s be honest, it always helps when you know what has gone into your food. While having a little internet break I came across 30 easy dinner recipes and this was one of them. It is really simple to make and is delicious. I am not a regular pasta eater but I do enjoy it every now and then as a change.

Ingredients

2oz whole grain farfalle pasta (you can use any kind you want to!)

2 tsp olive oil

1/2 cup artichoke hearts

1/4 cup red onion sliced thinly

1/4 cup peas

1 Tbsp Chopped  fresh mint


Method

This is probably the easiest How to: post that I have ever done. All you need to do is boil your pasta till it is cooked as you desire then toss in olive oil. Once you have done that continue to toss the pasta with the artichoke hearts, red onion and peas. Finish with some fresh mint, salt and pepper to taste. That is it! So simple and tasty. If you wanted to add in a few more calories, adding some chicken or chorizo would be delicious as well. As would adding some chunky vegetables like aubergines.
