Avoiding ready meals is one of my food goals. Sometimes it isn’t always possible but for 99% of the time I do it with ease because why would you want to be filling your body with nonsense? My collection of cookbooks isn’t huge, it is made up of 5-6 books that I use on rotation. Either that or I just go rogue and make up a recipe!

Chickpea & Lentil Dhal with Coconut Cauliflower Rice. I am a huge fan of Dhal, there I said it. This is potentially my faovurite recipes in the book, it is so delicious and relatively easy to rustle up. I do tend to leave out the coconut milk because I’m not a huge fan of it but with or without the recipe is a good un.
Turkey Meatballs & Courgetti. Potentially the easiest thign you could make of a weeknight. The turkey meatballs take little to no time to make and taste really great teamed with courgetti (which youc an buy pre sliced…) It is also quite a big portion so there is plenty for a lunchtime treat. I wouldn’t say this is the most groundbreaking of recipes but it is really tasty and definitely one for auto-pilot.
